7 Course Chef's Tasting
Seven courses through the heart of Gems — a guided taste of our cuisine as it evolves.
The Chef's Tasting
There is no menu to choose from. Seven courses follow the season and wherever the kitchen is headed that week. You settle in and let us cook for you.
The tasting is booked in place of our regular dinner menu, and the table is yours for the evening.
This is not a meal you order from. It is a meal that arrives, course by course, at the pace the kitchen intends.
Seven Courses
The Menu
Each course is a surprise. You won't know what's coming, only that it was made for you.
The first course is small, intentional and exact.
A plate composed around harmony rather than contrast.
A dish built with patience. The kind that takes all day to become what it is.
A brief, cooling interlude. A palate reset.
The heart of the evening. A protein shaped by attention, respect and craft. The course where the kitchen's values are most visible.
Aged, cultured or fermented, changing with the evening. A flavour that has lived a little longer, learned a little more. The final savoury note.
A sweet finish. The meal settles, and the evening finds its rest.
Our tasting menus evolve month after month. Please book in advance.
Advance reservation required · Full table participation required · Dietary needs accommodated with notice · Menu varies by evening · 24–48 hours notice to cancel
“My wife and I traveled from Edmonton today to visit Gems Café & Bistro in Fort Assiniboine, Alberta. We can cook… and we have a shared interest in exploring new food experiences. Chef Adrian and his wife Christina have created exactly that, an experience.”
