The upgraded kitchen at Gems Café & Bistro

We Upgraded the Kitchen

New Rational iCombi Pro oven in Gems kitchen

This coming month we're making some exciting upgrades to our kitchen. A new combi oven, more refrigeration, and a lot of small refinements will give us the space and precision to cook at an even higher level.

Three Years in the Making

For three years, we've been working with limited resources, maximizing every square inch of space, every piece of equipment. We've won fine dining awards along the way, but the most meaningful achievement might be this: we've consistently cooked and served between 35 and 65 people on a regular basis using a setup that was originally intended for a basic cafe.

That wasn't by choice—it was necessity. And it taught us everything about efficiency, workflow, and making the most of what you have. But it also showed us exactly what we needed when the time came to grow.

Transforming Our Workflow

The new combi oven alone changes everything. It's not just about capacity—though being able to roast, steam, and bake simultaneously across multiple levels will open up new possibilities for our menus. It's about precision. Consistent temperature control. The ability to execute complex techniques that simply weren't possible before.

More refrigeration means better organization, better food safety protocols, and the ability to prep further in advance without compromising quality. It means we can stock more local ingredients, work with seasonal availability, and maintain the farm-to-table relationships that matter so much to us.

The small refinements—better storage solutions, improved counter space, upgraded ventilation—these are the details that transform a kitchen from functional to fluid. They're what allow a team to move with confidence during service, to stay calm under pressure, to focus on the food instead of fighting the space.

What This Means for Our Guests

For you, this upgrade means we can push our cooking even further. More complex preparations. Greater consistency across every dish. The ability to take on larger events and private dining experiences without sacrificing the attention to detail that defines our approach.

It means Friday nights can grow. Saturday brunch can expand. Our Kitchen Sessions can explore more ambitious techniques. And when we say we're committed to fine dining in Fort Assiniboine, we now have the tools to match that commitment.

Looking Ahead

We're not changing who we are—we're becoming more of it. The same dedication to local ingredients, the same focus on technique, the same warm hospitality that's always defined Gems. Just with better tools to bring it all to life.

The upgrades begin this month. There might be a few days of adjustment as we dial everything in, but we're excited about what comes next. After three years of making magic in tight quarters, we're ready to see what we can do with a little more room to breathe.

Thank you for being part of this journey. Every reservation, every Friday night, every Kitchen Session—it all led here. And we can't wait to show you what's possible now.
